Winter Green Salad with Olives

Serves 6


1/3 cup fresh orange juice
3 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon chopped, drained capers
1/2 teaspoon dried oregano
Sea salt to taste
Pepper, fresh ground to taste

6 cups mixed winter green lettuce
1/2 cup pomegranate cells
3 tablespoons chopped pitted green or kalamata olives
2 tablespoons toasted pine nuts


VINAIGRETTE: Combine all the ingredients except the sea salt and pepper in a jar. Cover and shake well. Season with salt and pepper.

SALAD: Combine the greens, pomegranate cells, olives and vinaigrette in a large bowl. Sprinkle with pine nuts.
